Plain Brown Coffee Cake

There’s nothing plain about this delicious recipe, but “Plain Brown Coffee Cake” is what my mom has always called it. I made this today, this morning, and as well as a heavenly odor wafting through the house it wafted so many memories about my childhood. Mom made this lovely coffee cake often and it was always a favorite. I had never made this for Nathan before, but the odor drew him out of bed, and he ate almost half of it! I didn’t have any margarine, and used butter instead: works just fine!

Ingredients:   

       2 c. brown sugar

       2 c. flour

       1 c. margarine (or butter)

       1 tsp cinnamon

       1 c. buttermilk (Mom always used coffee)

       1 small tsp. soda

       1 egg

       1 tsp vanilla

Mix sugar, flour, margarine, and cinnamon tog and set aside 1 cup for streusel topping.

Add coffee, soda egg, vanilla to the remaining ingredients. Pour into buttered 13 by nine pan.

Sprinkle with streusel. Bake at 375 degrees for 35 to 40 minutes.   Wow so delicious and smells good.
