Norwegian Apple Pie
My mom found this recipe; I would say, sometime around when I was in high school. I take on faith the Norwegianness of this recipe. It is soo yummy and effortless. No crust! By now, all of you know that I cherish easy recipes, being no Julia Child myself. Have you read the book Julie and Julia by Julie Powell, who is a fellow blogger? It’s hilarious and rips right along. I highly recommend it, and the movie is good too. I’ve also read many biographies of Julia Child; my favorite is My Life in France.
Anyhow all of that is secondary to this fine little pie recipe, which is almost more like a cake, really. It smells divine in the oven. I don’t have any apples in the house now; If I did, I would whip one up to show you how pretty it is. This pie is good any night of the week; I like it, especially in the autumn, with a nice dollop of cinnamon ice cream. It makes an ideal house warming or just a “hi neighbor” gift. If I can make this pie, anyone can. Enjoy.
Ingredients:
1 tsp baking powder
3/4 c sugar
1/4 tsp salt
1/2 c flour
1 egg
1c sliced apples
1 tsp vanilla
1/2 c sliced nuts
Directions:
#1 mix the ingredients in the order given, folding in the nuts and apples last
#2 put the mixture in 8 in. greased pie pan
#3 350 for 30 mins
#4 Serve warm or cold with whipped cream or icecream
