Nueske’s Braised Cabbage with Bacon

TRUTH #1: Everybody knows that bacon is the Magic Embodiment of Everything that is Good and Pure in this World.

TRUTH #2: Everybody knows that Nueske’s Bacon is the Uncontested Pinnacle of Pork Products.

Given these truths it is abundantly evident that this recipe, found scribed on the packaging in which the all-knowing master of the pig wrapped this positively peerless product, MUST be the best Bacon Bite going.

I have tried it. Yes, Constant Readers, it is.

3 slices Nueske's Smoked bacon, diced, fried & drained

2 Tbsp bacon fat

2 tsp garlic, minced

2 small leeks, tough outer leaves removed, rinsed, and thinly sliced

1 large head Savoy cabbage, core removed, cabbage shredded

1 C. low sodium chicken broth

1 can (15 oz) Great Northern beans, rinsed & drained

1 Tbsp fresh sage, finely chopped

1 Tbsp chives, chopped

Fresh ground pepper, to taste

 

Fry bacon in 12" skillet over medium heat until crisp; set bacon aside on paper towels. Reserve 2 Tbsp bacon fat in the skillet. Add garlic and leeks to skillet; cook about 2 minutes. Stir in cabbage, chicken stock, and beans.  Simmer until cabbage begins to wilt; about 3 minutes.  Add bacon, sage, and chives.  Toss until well combined.  Add fresh pepper, to taste. Serve hot.
