Best ribs… brisket… pulled pork….chicken…soup… eggs… in town

A couple of months ago I got a 6 Quart Instant Pot pressure cooker (among all the other things it does) and I have been having great fun exploring all of the possibilities of this amazing appliance. So far, there’s nothing I’ve made in it that I’ve been really disappointed in. I highly recommend it. Tonight we made ribs for the second time, and they are sublime. marinated them the night before in cola. 40 minutes in the IP followed by a quick bubble with the BBQ sauce under the broiler. Seriously mouthwatering meat. I think my all time favorite so far, though, aside from the fluffy egg bites which we have almost every morning (better than the one you can get at… that place I used to work at…), has got to be the pulled pork. Gigantic hunks of nice fatty shoulder roast, cooked to buttery tenderness in root beer of all things, in a fraction of the time. Perfection. Excelsior!
